I'm not sure of the mechanism but I know that certain types of disease resistance and maybe some size things are passed that way. I've always assumed that there's a fair bit of random stuff in the cell besides the DNA, legacy virus-type things and whatnot. That said, I know you can de-virus garlic by growing from seed.
