Chocolate Almond Biscotti
Date: 2006-11-21 03:59 am (UTC)1/4 tsp. salt
1/2 cup sugar
1/2 cup oil
1 tsp. baking powder
1 tsp. vanilla
1 1/2 cups ground almonds
2 1/4 - 2 1/2 cups flour (enough to make the dough pliable)
1 tsp. cinnamon
1/3 cup chocolate bits
1 tbsp. espresso coffee grains (package) or freshly ground
Beat eggs
Add sugar, oil, salt, vanilla & beat well
Add the rest of the ingredients (enough flour to make stiff dough)
Shape into 3 rolls.
Bake on large greased pan in a 350º oven for 30 minutes
Cool and slice into 1/2" pieces
Then:
Bring oven to 400º and place pan with sliced biscotti in the oven & turn off heat. Leave in for 15-20 minutes.
